At time of inspection, sanitizer at 3 compartment sink had a concentration of 0ppm for quat ammonia. The bucket for the 3 compartment sink sanitizer was empty. PIC attached a bucket to the 3 compartment sink at time inspection. Instructed PIC re-wash any dishes at time of inspection. A chemical sanitizer like quat ammonia, must have a concentration between 150-200ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.
