Observed the back handwashing sink to be obstructed by a rack that was placed over the sink and faucet. The rack was removed from the top of the sink. Discussed maintaining handwashing sinks to be accessible at all times. Facilities must be maintained in a condition that promotes handwashing. Handwashing sinks must be maintained so accessible at all times, not used for other purposes than hand washing, and supplied with warm water, soap and paper towels. Corrective Action: Corrected at time of inspection.

Observed half of bottom unit tcs foods in temperature danger zone (41*F-135*F). Ambient temperature of main unit is 43.5-53*F with min/max. Thermometer to main pizza line was not on display at time of inspection. When turned on unit thermometer was at 48*F. Notified Person In Charge (PIC). Internal temperature of the following: boneless wings at 53*F; cooked wings at 50*F; cooked philly meat at 52*F; pepperoni at 50*F; cooked past at 44*F. Directed PIC to place all food inside main walk in unit to cool to 41*F. Verified after 30 minutes. ========= Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
