The day it was made as day 1 +6 days for a total of 7. Items such as milk, heavy cream, butter, opened canned pumpkin puree. 3) buttercream frosting shall be stored at 41*F or less, including decorated cookies. Discussed with PIC the frosting shall be treated as TCS until the product has gone through a Process Authority and deemed as non-TCS. Discussed to take out smaller batches for prepping to prevent the large container going through the danger zone temperatures multiple times daily.

Observed employee food in different locations within the refrigerated reach in unit. Discussed with person in charge (PIC) to create a designated area in the reach-in for employees to store their food in a way that prevents contamination of the establishment's food for sale. PIC created a designated area and placed all employee food there at the time of inspection. Corrective Action: Corrected at time of inspection.
