Then observed the chef moved the weight back to the raw salmon that was cooking. Equipment Food-Contact Surfaces and Utensils shall be cleaned/sanitized in between different types of raw animal foods; change from raw foods to RTE foods; between used with raw fruits and vegetables and TCS food; before using or storing food temperature measuring device; any time contamination may have occurred. Weights were sanitized at the three compartment sink at time of inspection. Salmon was cooked above 165 °F. Corrective Action: Corrected at time of inspection.
