Discussed having a backup set of strips on standby for future. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Sanitizer solution was remade at the time of inspection and the concentration was confirmed with test strips. Ensure quaternary ammonia sanitizer is maintained between 150-400ppm when in use. Final walkthrough of the BlackRock Cafe. Construction complete and approved. Superintendent will follow up on the items below before opening:1). The RP valve upstream of the rocket rinser has to be cleaned and re-tested, unit is currently off as it leaks.2). Install metal coved base along the front of the walk-in.3). Caulk and seal all penetrations through the walk-in wall/ceiling. Sprinkler head was not done, foam in.4). Install a fly fan micro switch for the roll up door air curtain. Electrician is on site.5). Floor under the front counter needs a touch up where the bold was cut down.6). Hand wash sink in the front seems to have a slow leak.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Second walkthrough of the Black Rock Cafe. The following items were discussed:1). Coved floor / wall juncture will be required throughout the front counter area.2). Windows in the restrooms will be caulked in.3). Drain in the south restroom will be lowered.4). Self closers will be installed on the restroom doors.5). Unusual metal schluter is used in the restrooms, see if you can caulk the schluter at the floor junctures so liquids can not go under.6). Please provide an additional hand wash sink in the front service area next to the south side dump sink.7). Please caulk the underside front counter at the pony wall junctures.8). Floor sink under the three compartment sink will be back filled as well as the mop sink.9). Back room will be based out with a rubber coved base after painting with a semi-gloss.10). Please Install metal coved base along the front of the walk-in.11). Walk-in will flashed off at top and front.12). Seal schluter at the floor juncture where the floor is depressed.13). Caulk and seal all penetrations through the walk-in wall/ceiling.14). Install a fly fan for the roll up door air curtain.15). Dual check valves that meet plumbing standard ASSE 1022 will be installed for the espresso machines.16). RP valves will be tested and certified before final inspection.17). Please provide splash guards on hand wash sinks where you will be storing single service items of food items within 12 inches.No County legal action will result from this inspection.E-mailed report on site for superintendent.
