Discussed the mop sink faucet, which was recently replaced. Please replace the faucet with a faucet that has an approved AVB installed. Emailed picture of approved faucet type. Observed no hand soap available at the hand washing sink at the end of the cook-line. PIC provided a bottle of soap. Discussed installing a dispenser or providing a pump to ensure that soap is always available for hand washing. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed open packages of the following TCS foods in the walk-in cooler: deli turkey dated 5/11, shredded cabbage dated 5/19, spinach dated 4/17, and pizza sauce dated 5/19. PIC discarded the TCS food items for being held more than 7 days, see embargo form. The Food Code requires that TCS foods be discarded 7 days after opening/prep when held at 41F or less. Listeria is the pathogen of concern, which cannot be observed by looking at the food in question. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or once cooked/prepped, such as noodles or proteins. Adding 6 to the start date (6+1) determines the discard date. Corrective Action: Corrected at time of inspection.
