Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge it was determined all TCS foods had been hot holding since 10:30 AM. Predefined Comment: All TCS foods improperly hot held were reheated to 165°F at time of inspection. Discussed utilizing 4 hour time as a public health control for TCS foods or storing deeper in the steam wells with the person in charge. Corrective Action: Corrected at time of inspection.
