Probe thermometer for establishment could not be located at time of inspection. Establishment cold holds, and cooks protein from raw. A probe thermometer is required to be maintained and available at all times of operation. It should be frequently utilized to ensure proper cooking temperatures are met and the cold holding of time temperature-controlled foods are maintained below 41 degrees Fahrenheit. Must provide a properly calibrated probe thermometer for establishment prior to re-inspection. Corrective Action: Correct prior to re-inspection. Reinspection to occur on or Before: July 21st 2025.

Person in Charge stated that pesticide chemicals may have been left over from previous owner. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.
