Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC voluntarily discarded those items at time of inspection. Corrective Action: Corrected at time of inspection.

Observed multiple sandwiches with sausage, ranchero meat (beef), egg, and chorizo in the walk-in cooler being with discard dates ranging from August 24th to August 26th. "Pulled" dates (pulled from freezer to walk-in cooler) were verified with the person in charge (PIC) as ranging from August 18 to August 20. Informed person in charge (PIC) that TCS food items should be used or discarded within 7 days. PIC voluntarily discarded those items at time of inspection. Corrective Action: Corrected at time of inspection.
