For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources.>>Observed the following ready to eat (RTE) time/temperature controlled for safety (TCS) foods with no preparation/open date/open and thaw date: milk, cooked rice, cooked beans, sliced ham, and house made salsa with tomatoes. Person in charge indicated they were all prepared/opened/opened and thawed 09/18/23. Person in charge informed that all RTE TCS foods must be labelled with the day they were prepared/opened/opened and thawed with 24 hrs. of doing so. Person in charge had these labelled. Person in charge was informed that ready to eat time/temperature controlled for safety foods must be discarded 6 days after opening, preparing, opening and thawing (or 7 days with day 1 being the day they were opened/prepared/opened and thawed); RTE TCS foods may have harmful bacteria that grow at refrigeration temperatures and after 7 days may cause foodborne illness. PRIORITY VIOLATION-5-203.14, P: Backflow Prevention Device, When Required>>>Observed Reverse Osmosis (RO) filtration system. Person in charge indicated the system was installed this year during the summer. No backflow device observed between the RO filtration system and copper piping. Person in charge informed that due to reverse osmosis filter these filtration systems would require a Reduced Pressure Zone (RPZ) backflow device between the filtration system and the copper pipping that supplies water to the system; copper pipping upstream of a RO filtration system poses a potential copper contamination risk when a high hazard backflow device is not present. Establishment also informed that they were required to apply for a minor remodel when they installed the reverse osmosis systems. Establishment must apply for remodel permit with 5 business days. RO filtration system also has a shut off nozzle and no 1 inch air from the floor. Installing a the RPZ would correct this. If establishment removes RO filter they will still need to provided 1 inch air gap for shut off style nozzle. Re-Inspection 09/25/23. Correct By: Correct Prior To Reinspection
