The ambient air temperature observed at less than 10F and all food was frozen solid during the inspection. PIC contacted the area coach and the technician will arrive within 2 hours to ensure that the freezer maintains food frozen.

Inspector's notes

Observed several plastic hot holding pans with accumulations of soil and food debris on the inside food contact surfaces, being stored as clean on the rack across from the 3-compartment sink. The pans are used to hot hold TCS foods such as the cooked, diced potatoes, and also non-TCS foods. PIC placed the pans into the wash compartment to remove all debris and will discard any pans that cannot be cleaned. TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment. Discussed the importance of properly cleaning food contact surfaces. Corrective Action: Corrected at time of inspection.
