In the cold holding display case observed a tray of cheese sticks at 49-50*F. Per employee the cheese sticks had been in the unit since at least yesterday. Unit was holding around 45-47*F on inspector's min/max thermometer. Cheese sticks were embargoed. Cheese sticks will no longer be stored in case. Only a display item will be in case and items for sale will be stored in working cooler.

Establishment was utilizing display case cold holding unit for TCS foods when the unit is unable to hold a temperature below 41*F. Until unit is working well enough to hold a temperature below 41*F, no TCS food items for sale will be stored in the unit. A display cheese stick will be stored in there for display purposes only and it will not be sold. Until unit is working, establishment will use other coolers for TCS foods.
