No County legal action will result from this inspection.OF NOTE: Discussed the following items: 1) Discussed date marking and including actual prep date not only day of week. 2) Discussed thermometer requirements. 3) Reviewed cold brew preparation requirements. All cold brew must be brewed under refrigeration, treated as a TCS food, and used within 7 days. 4) Discussed drainage options with PIC. All sink basins from 3-compartment sink can be tied to one drain line before being routed to floor sink with approved 1 inch air gap. All pipes draining to floor sink should drain in a manner to minimize splashing. 5) Discussed installing splash guard at donut prep station hand sink or relocating food stored in area. 6) Reviewed blender cleaning process. All food contact surfaces stored at room temperature that handle TCS foods must be washed, rinsed, and sanitized when in use every 4 hours.
