Inspector's notes

Observed time/temperature controlled for food safety (TCS) milk-based nacho cheese hot holding at 109*F. Nacho cheese came from a hermetically sealed can. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Employee stated the cheese had been hot holding for only an hour. Employee was instructed to heat up TCS cheese to 135*F before placing cheese back out for hot holding. Corrective Action: Corrected at time of inspection.
