Observed the AVB at the mop sink leaking when water is turned on. Informed PIC that it needs to be brought back into good repair prior to next routine inspection. Observed the condensation pipe for the soda machine fallen into the floor drain. Informed PIC that the pipe needs to be adjusted so that there is at least a one-inch air gap between the outlet of the pipe and the top of the floor drain. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Employee washing dishes/equipment at the three compartment sink had the items stacked excessively high in third compartment to which multiple dishes were not in the sanitizing solution or being sanitized. The employee was instructed to remove some dishes and properly sanitize all items. Ensure that equipment/utensils are exposed to chemical sanitizer for proper length of time according to manufacturer’s directions. Corrective Action: Corrected at time of inspection.

Inspector's notes

Multiple bags of caramel and mocha frappe mixes, multiple cans of whipped cream, regular cream, and yogurt base-46-54F in the reach in coolers in the drive thru and under the frappe machine. PIC stated that all items had been in the units for an extended amount of time and discarded-see embargo form. Keep PHF/TCS in cold holding at 41F or below. *Ambient temperature of the drive thru reach in cooler was 61F. Ambient temperature of the frappe reach in cooler was 51F. PIC removed all food items from the units and stated that the units would not be used until maintaining 41F or below. Establishment has sufficient refrigeration. Corrective Action: Corrected at time of inspection.
