Inspector's notes

Observed flash fried potatoes and spanakopita (spinach, cheese) on a unmonitored speed rack in the back of the kitchen with an internal temperature range of 60F-65F. Per PIC, the potatoes and spanakopita have been cooling for less than 2 hours prior to inspection. PIC moved the TCS food items to the walk-in for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed frozen reduced oxygen packed (ROP) salmon thawing in the walk-in refrigerator still in packaging. Observed reduced oxygen packed beef in a bucket on side of three compartment sink, which per employee was in the process of thawing. Discussed ensuring that meats are thawed under cold running water and that all ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water in order to prevent the promotion of the growth of anaerobic pathogens. Corrective Action: Corrected at time of inspection.
