Observed no food protection manager in the establishment while open and operating. Store is usually managed by PIC's son, but son had a dr appt today. PIC was unsure if son had the manager certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Observed in the reach in prep table on the cook line, there was raw chicken being stored aboved cooked chicken. PIC moved the cooked chicken to the walk in refrigerator and put the raw chicken on the bottom shelf in the reach in. Foods shall be stored according to their final cooking temperature with ready to eat food on top and raw chicken on the bottom.

Observed PIC handle raw naan dough with gloved hands, put the dough in the oven, take out the cooked naan and removed gloves then proceed to cut cooked naan while touching the naan with his bare hands. RTE food that was contacted by bare hands was discarded by PIC at time of inspection.

Observed chicken tandoori at 48-52F on rack in walk-in cooler with a lid on. Per PIC, chicken tandoori was cooked, placed in walk-in cooler the day prior to inspection, and had not been removed from walk-in cooler. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
