Inspector's notes

Observed barbeque pork cooling in the walk in refrigerator in a tub that exceeded four inches. Tub was overfilled to the point that the food was touching the bottom of the rack to the shelf above. All cooling containers should be shallow and the food should not exceed four inches in depth. Person in charge removed the pork and placed in two separate shallow containers for proper cooling. Corrective Action: Corrected at time of inspection.

Observed warewashing machine in disrepair as it did not release chlorine sanitizer into the rinse cycle during a test run. No food contact surfaces inside the washing machine at time malfunction was observed. All warewashing equipment should be maintained in good repair and function as intended by the manufacturer. Establishment to utilize the manual warewashing sink for sanitization purposes until the dishwasher is repaired. Corrective Action: Corrected at time of inspection.

Provide an ASSE 1013 RPZ backflow preventer upstream of the soda carbonator. 4. Provide a riser upstream of the 3-compartment sink and warewash machine. 5. Repair the 3-compartment faucet leak. 6. Provide a rigid drain line for the T&P relief drain as discussed. 7. Provide uni-struts for drain lines to ensure air gap is kept with floor sink (prep sink, ice machine, soda drains, warewash area drains). 8. Attach prep sink to the wall. 9. Seal the backsplash and sides of all sink fixtures. 10. Seal penetration inside the walk-in cooler (gasp as needed as well).

Provide smooth easy to clean ceiling tiles over front counter area, restrooms, and few missing in kitchen area. 5. Provide missing vent or repair the area so that it does not leave an opening to exterior exposed inside the water heater room. 6. Clean all floor sinks as discussed. 7. Provide weather stripping and adjust door sweep for rear entrance (no light showing through).
