Observed cooked chicken which are held under Time as a Public Health Control not having a time stamp and having an internal temperature of 106*F. Person in charge states the chicken was taken out of a temperature control unit less than an hour prior to the inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Observed numerous raw chickens (quarter, half, whole) stored in waste receptacle liners in walk-in refrigerator. Use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. Person in charge (PIC) removed chicken and chicken portions from bags during inspection to correct. Corrective Action: Corrected at time of inspection.

Establishment does not have quaternary ammonium (quat) sanitizer test strips available for sanitizer used at 3-compartment sink and for sanitizer buckets. Test strips are required for any sanitizers used with food contact surfaces. Sanitizer concentrations were verified to be in the proper range by inspector at time of inspection. Provide sanitizer test strips prior to re-inspection. Corrective Action: Correct prior to re-inspection. Re-inspection is tentatively scheduled for 3/21/2025.
