#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed internal temperatures between 43*F-46*F in the cold-holding unit across from the cook station using probe thermometer. Min/max thermometer was used in two areas of the unit (top and bottom) and a temperature of 44.5*F was observed. Person in charge (PIC) stated the food was place in the unit recently and moved the food to the walk-in cooler at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed that there was no sanitizer dispensing to the warewashing machine. Person in charge (PIC) is scheduling a service call for the machine. PIC shall use a chlorine bleach (already onsite) and the 3-compartment sink to sanitize dishes while waiting for service to warewashing machine. Corrective Action: Corrected at time of inspection.

Observed a Y-valve installed at the mop sink. Discussed with person in charge (PIC) the Y-valves are not approved and that it increases risk of backflow problems and contamination to water supply lines. PIC removed the Y-valve at time of inspection. Corrective Action: Corrected at time of inspection.
