PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection.

Inspector's notes

Observed sliced deli meat ( turkey, ham, capicola, chicken, pepperoni, salami, roast beef), sliced tomatoes, lettuce, tuna, and cheese (provolone, pepper jack, cheddar, mozzarella, American, Swiss) in prep table with an internal temperature of 46-49*f. PIC stated food had previously been moved to reach-in less than 1 hour prior to inspection. Equipment had been previously worked on and was not up to temperature prior to placing food inside. All food was moved to working unit, holding temperature below 41*f until prep table equipment reaches proper temperature. Please monitor cold TCS foods closely to ensure temperature remains below 41*f at all times.
