No County legal action will result from this inspection.Discussed bacon. Bacon that is cooked until crispy is non-TCS and does not require refrigeration. Discussed making sure bacon is cooled to 41*F if it is going to be stored in the cooler so it does not heat up surrounding items. Inspection report emailed.
Inspector's notes
Observed ham in the reach-in cooler on the cook line with an internal temperature of 49*F when measured with a probe thermometer. According to person in charge, ham had been in the cooler for 2 hours. Bacon stored next to the ham had been cooked earlier and had warmed up the ham next to it. All TCS foods must maintain internal temperatures of 41*F and below. Ham was moved to the walk-in to rapidly cool at time of inspection. Corrective Action: Corrected at time of inspection.
