Observed Meat slicer in the prep area of the kitchen with a plastic bag covering it. Per person in charge the slicer is used to slice chicken, and ham was cleaned and bagged as ready to use. Observed debris accumulated in recessed areas of the slicer and on the underside of the blade. Reviewed wash, rinse, and sanitize with person in charge. Employee Re-washed and sanitized slicer at time of inspection. Corrective Action: Corrected at time of inspection.

Observed hot hold rice 130*F, and Beef 129*F at steam table . As per the person in charge rice and meat were added to steam table at approximately 9:00 am. Items were discarded by person in charge. Observed hot hold beans at steam table at 132*F. As per the person in charge, beans were placed at steam table around 1:00pm. Beans were quickly reheated to 165*F. Hot hold of food to be at 135*F or greater. Advised staff to verify food temperatures throughout the day using their metal stem thermometers. Corrective Action: Corrected at time of inspection.
