Observed dishwasher dispensing 0 ppm of chlorine sanitizer in final rinse. Container of sanitizer attached to machine was empty. All chemical dishwashers must dispense 50-100 ppm of chlorine sanitizer in final rinse to ensure proper sanitization of food contact surfaces. New sanitizer container was attached at time of inspection and a concentration of 50 ppm was achieved. Corrective Action: Corrected at time of inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. Observed cream cheese sitting on top of pasta station with an internal temperature of 60*F when measured with a probe thermometer. According to chef, cream cheese had been taken out about 30 minutes prior. All TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 41*F and below. Cream cheese was moved to the walk-in to cool rapidly at time of inspection. Corrective Action: Corrected at time of inspection.
