Inspector's notes

Observed lunch meats such as salami and capicola, as well as provolone cheese holding 52F in the top portion of the prep cooler on the assembly line. PIC discarded the products. Discussed using metal containers and removing products from bags to allow for proper air flow. Also observed cheese bread holding room temperature. PIC said it was made an hour and a half prior and was supposed to be logged on the 4-hour time log. PIC put the time it was taken out of the oven on the log sheet. TCS food products must hold 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
