Observed hand sink by dishwashing area hot water handle to not work properly. Management stated the handle broke yesterday and a plumber should fix it today. Staff have been turning hot water on by valve below the sink or using alternative hand sinks. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed several bagel utensils, wooden sticks for doughnuts and rolling pins stored use with white powdery product next to and above clean utensils. Per person in charge (PIC) the utensils are only there temporarily until they get cleaned by the end of the day. Discussed with PIC all food-contact surfaces must be stored cleaned to sight and touch. Used dirty equipment shall not be stored above or next to clean equipment. PIC took the used utensils to the dish area and cleaned up the shelving. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed kolaches with hot dogs in the bottom of the bagel prep table unit with an internal temperature of 54*F measured with a probing thermometer. Per PIC the kolaches were cooked left out for 30 minutes and then placed in that bagel prep unit. Discussed with PIC the bagel prep table is not an adequate cooling refrigerator. Also discussed TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Worked with PIC to create a Time as Public Control policy for the Kolaches, Jalapeno cream cheese pastry and for the pepperoni croissant. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed icicles form from the freezer ventilation. Icicles were on closed boxes and no direct food contamination was observed. Discussed with PIC to not store any foods underneath and all nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC relocated boxes at time of inspection and placed sheet trays down to prevent further icicle contamination. Corrective Action: Corrected at time of inspection.
