At the mop sink, observed the chemical dispenser attached downstream from an atmospheric vacuum breaker (AVB) and a dedicated water line was available for the chemical dispenser. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Staff immediately disconnected the dispenser from the mop sink faucet at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed in-use high temp conveyor dishwashing machine with a surface temperature not exceeding 158°F after multiple run-throughs of two temperature measuring devices. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC called maintenance and switched to using the 3-compartment sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed mislabeled cheese sauce in walk-in fridge with a date mark of 10/15 (8 days including day made by time of inspection). All RTE/TCS food must be used or discarded after 7 days including the day it was made. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
