Observed various food containers stored in the only hand wash sink in the back kitchen area. Observed quat sanitizer in use at the 3 comp sink measuring over 500+ ppm with a chemical test strip. Establishment could not locate sanitizer strips at the time of inspection. Solution was diluted by half and remeasured above 500ppm. The employee washing dishes stated they look for 500ppm quat per the instructions. Observed the chemical label from the manufacturer identify safe and effective food contact surface sanitizing concentration at 200ppm quat. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Reviewed testing methods with PIC. Corrective Action: Corrected at time of inspection.

Establishment had not measured sanitizer with a chemical test strip and had only lactic acid/DDBSA or chlorine test strips available. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (200ppm per establishment's quat). PIC emptied and refilled the 3 comp sink at the time of inspection.
