Observed stacks of plastic pans stored as clean on the storage shelf at time of inspection. When separated, clean water was observed in between the pans and pooled on the underside of rim. Discussed placing equipment and utensils in a self-draining, tilted and inverted, position that allows adequate air drying. Items must be allowed to drain and to air-dry before being stacked or stored. Corrective Action: Corrected at time of inspection

Observed red and green sauces being hot held on the flat top with temperatures between 108 to 125*F at time of inspection. Per cook, sauces were put out less than an hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
