Inspector's notes

Observed on the TPHC speed rack cooked cauliflower, cooked chicken, cooked sweet potato fries, marinated soft tofu at temperatures of 77*F to 78*F measured with a probing thermometer. Per person in charge (PIC) all items cook above 165*F and were placed on the rack 25 minutes prior to inspection. Discussed with PIC TCS items are able to sit at room temperature until the cool to 135*F and then other methods must be used. Discussed with PIC TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC relocated the TCS items to walk-in to properly cool at time of inspection. Corrective Action: Corrected at time of inspection.

Observed portioned cooked chicken in a drawer unit behind the salad prep table with temperatures between 74 to 76*F at time of inspection. Observed portioned sliced steak and onion mixture with temperatures of 52 to 54*F in a prep table at time of inspection. Per chef, both items were portioned out less than 2 hours prior inspection and then placed into the prep tables. Chef moved items to blast chiller to rapid cool at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

#51 — Plumbing Installed; Proper Backflow DevicesPriority5-202.11

Inspector's notes

Observed 2 water cooled portable AC units installed within the kitchen. One portable AC unit was supplied from the mop sink. The AC unit was observed connected via a y-valve with shutoffs downstream from an atmospheric vacuum breaker (AVB). The drain line was draining to mop sink without an airgap. The second portable AC unit was supplied from the prep sink with no backflow device installed. The drain line was draining to a floor sink with no air gap. Discussed approved plumbing with the PIC. All water connected equipment requires an approved backflow device. Equipment with potential for backpressure and back siphonage require a backflow device approved for those applications. Provided backflow handout to PIC. Also discussed with PIC that shutoffs are not approved downstream from an AVB. Also discussed that drain lines for water connected equipment require approved minimum 1 inch air gaps. Corrective Action: Correct prior to re-inspection on 11/10.

No County legal action will result from this inspection.Discussed cooking and holding procedures for steak. Discussed labeling chemical spray bottles at time of inspection. Please address the following items prior the routine inspection: 1) Provide a sealer to the concrete pad located near the back exterior door. 2) Finish the wall paper design in the restrooms, as needed. 3) Provide the light bulbs at the warewash machine vent hood. 4) Continue caulking escutcheon plates and plumbing penetrations throughout the facility. 5) Provide the dome grates or strainers at the floor sink and trough drains, as needed. The small under counter dish machine in the kitchen is not approved for use at this time. Please only use the large ware wash machine and three sink for cleaning food contact surfaces.
