Observed salsa picante made within 30 minutes of inspection actively cooling in refrigerated self-serve salsa bar, with an internal temperature of 48-50*F. All foods in a state of active cooling should be placed in equipment designed to rapidly cool. Person in charge removed salsa and placed on ice for quick cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
