Discussed with PIC walk-in doors in disrepair would allow cold air to seep through potentially disrupting equipment's capacity to maintain coldholding temperatures of 41'F and below. PIC has an active work order on door at time of inspection. Repair all equipment to a state of good repair prior to next routine inspection. Inspector's notes

Observed spring mix with cut leafy greens (44-50'F) in tabletop coldholding unit on assembly line. Unit observed located within close proximity directly across stove top which is an active heat source. PIC stated spring mix was brought out less than an hour prior from walk-in unit and have been out of temperature for less than 4 hours. PIC was instructed to return spring mix to walk-in refrigeration to rapidly cool down to 41'F but opted to discard item for internal quality purposes at time of inspection. Ambient temperature of unit measured 33.6'F. Discussed with PIC to have spring mix covered with lids when not in-use to ensure food items are kept at 41'F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed cooked steak (110'F) in reach-in hotholding unit by reheating well. PIC stated beef item was made less than 2 hours prior. Cooked steak item in question improperly hot held were reheated to 145°F (per variance) at time of inspection. Observed pan of cooked steak (122-131'F) being hot-held on stovetop located on service line. PIC stated steak item was made less than 2 hours prior. However, PIC discarded item in question for internal quality purposes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
