Inspector's notes
Observed grilled onions hot held next to prep table measuring at 110F. PIC reports onions placed in unit 30 minutes prior and that water should be in hot holding unit. PIC filled hot holding unit with water and put onions on flat top grill to reheat to 165F before returning to hot holding unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
