Inspector's notes

In use quat sanitizer in three compartment sink at less than 150 ppm. PIC changed the sanitizer container and adjusted sanitizer to proper concentration. Chlorine sanitizer in dish machine at 0ppm. PIC stated the the dish machine would be serviced and stated that all dishes would be washed, rinsed, and sanitized in the three compartment sink until the dish machine is repaired. Ensure that sanitizer is at proper concentration according to manufacturer’s directions. Corrective Action: Corrected at time of inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. The coffee is brewed in the main kitchen and then placed into coffee dispensers. The coffee dispensers are brought back to the main kitchen to be washed, rinsed, and sanitized.
