Observed knives, used for food prep in the kitchen, with a coating that has started to wear and chip off. Discussed replacing the knives with a non-coated set to prevent the coating from entering the food. Also observed absorbent towels/mats being used under the dish drying racks. Please replace with a non-absorbent mat to prevent pathogen growth. Materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. Observed open packages of deli turkey, cream cheese, American cheese, and cottage cheese in the reach-in refrigerator, without date marks. PIC dated the open TCS foods. Date marking requirements apply to containers of processed food that have been opened and to food prepared by a food establishment, in both cases if held for more than 24 hours. Discussed 7-day date marking. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or cooked/prepped, such as noodles or proteins. Adding 6 to day one (6+1) determines the discard date. Corrective Action: Corrected at time of inspection.
