Observed gravy cooling in walk-in cooler in covered plastic containers, items measured 85-130 degrees F. Containers were uncovered, and larger containers were transferred to smaller containers at time. Please ensure food items are cooled in shallow, uncovered containers until they drop to 41 degrees F to ensure cooling time benchmarks are met. Corrective Action: Corrected at time of inspection.
