Observed TCS food items with internal temperature between 45-56F in the reach in cooler by the cook line. TCS foods included raw beef, cooked beef, beef broth, red salsa/sauce, and cheese. The person in charge stated the food items had been placed in the reach-in cooler less than 3 hours and moved all TCS foods to alternate cooler for rapid cooling.

Observed raw beef patties and diced raw beef at 54 degrees in upright cooler. in back kitchen area. PIC indicated the items have been in cooler less than two hours as cooler needs to go to defrost cycle as ice builds up on inside of cooler. All TCS food were relocated to walk in cooler. And pic will call for repairs of the unit to hold all food items below 41 degrees. Also, PIC will get a thermometer to place in Unit.
