In the walk-in cooler two large pieces of pok roast tighlty covered in alumin foil had internal temperatures of 46*F. The PIC verified the food temperatures. The food items were embargoed and voluntarily discarded by the PIC at the time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.

In the reach-in refrigerator, deli meats (bologna, turkey, and chicken) with use-by dates of 9/4/25 through 9/6/25 were found. In the walk-in cooler, cooked pork chops dated 9/8, cooked sausages 9/6/25, cooked chicken 9/12/25, and gravy dated 9/9/25 were found. The food items were embargoed and voluntarily discarded by the PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).

The outside dumpster had food improperly bagged and food debris was observed on the bottoms of the dumpster. Discussed ensuring a food is properly bagged and tightly sealed and cleaning the inside of the dumpster on regular basis to eliminate pest harborage areas. Corrective Action: Correct prior to next routine inspection.

During inspection all 3 handwash sinks did not have soap available. The person in charge (PIC) was able provide fix all the soap dispensers at the time of inspection. Corrective Action: Corrected at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing.
