Inspector's notes

Observed chicken cooked from raw state at a final cooking temperature of 140*F. Confirmed with employee the chicken had finished cooking and instructed employee to take an internal temperature to ensure the chicken was done. After employee had taken a final cooking temperature, inspector took an internal temperature of 140*F. All raw animal proteins must reach a final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. PIC instructed employee to take a cooking temperature at the thickest part of the chicken and continued to cook the chicken until temperature reached 165*F. Corrective Action: Corrected at time of inspection.

Observed TCS soup with milk as an ingredient hot holding in a hot box at 108*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated the soup had only been in the hot box after reheating for 30 minutes. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Consecutive repeat violation: 2nd. Corrective Action: Corrected at time of inspection.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The TCS items were above 41*F for an unknown period of time and the PIC decided to discard the products at the time of inspection. PIC stated cold holding equipment was broken and should not be in use. Corrective Action: Corrected at time of inspection.

Observed shredded cheddar cheese, sour cream, raw chicken, and cut lettuce with cut tomatoes at temperature ranging from 45–52 degrees F in reach in and prep table units. Per PIC all items had been prepared longer than 4 hours prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
