Observed hot dogs 46*F, cut lettuce 46*F, sliced tomatoes 44*F, sliced turkey 44*F, shredded cheese 48*F, sliced cheese 44*F, sausage patties 45*F, previously canned tuna 44*F, liquid egg 50*F in the prep table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Observed no detectable sanitizer is wiping cloth bucket. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. It was determined that chlorine sanitizer was incorrectly supplied to the dispenser at the three compartment sink. PIC was instructed to change out the chlorine for quaternary ammonium and prime the machine. Corrective Action: Correct prior to next routine inspection.
