Inspector's notes

At the boba/beverage prep station, spoons and stir sticks stored in container filled with hot water between uses. Water temperature measured at 125°F. Reviewed requirements for utensil storage, utensils can be stored dry on a clean surface for up to 4 hours or if stored in hot water, water temperature must be maintained at a minimum temperature of 135°F or higher. PIC agreed to store items via one of these two methods.

If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Observed croissants filled with ham and cheese with internal temperature measured to be 63*F, per person in charge time as a public health control is used and they are discarded after four hours. Policy was provided. Per person in charge items were just reheated thirty minutes prior, and were marked with discard time during inspection.
