Brisket cooling in walk-in that had been covered, was found to have an internal temperature of 58 deg F. All items being cooled should not be covered until temperature reaches 41deg F or less. Containers were uncovered and spread out at time of inspection to allow for proper cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed ware washing machine (in use) to be providing a chlorine concentration of <50ppm, and a maximum temperature inside machine at plate level of 102.*F. Machine was re-run and observed that sanitizer bucket appeared to be empty. Sanitizer was replaced and machine was run several times and chlorine concentration measured to be 50-100ppm, maintain. Advised person in charge to re sanitize all items that had been through machine today. Provided ware washing machine log. Corrective Action: Corrected at time of inspection.
