Slicer that was indicated to be clean by an employee, still had visible food matter on several parts of the slicer. PIC had employee break down and clean slicer at time of inspection. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Walls near prep areas, fronts and insides of equipment, and over head air vents have visible soil and build up of food matter. Clean and maintain clean to prevent contamination to food and food prep areas. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---Observed Various TCS food items being cold held ranging from 44-48*F in walk-in cooler & walk-in ambient temperature of 44*F. These items included cooked noodles, raw meatballs, sliced deli meats, and cheese. Per PIC Items had been in walk-in since previous day and check built in thermometer daily. PIC lowered setting of walk-in cooler at time of inspection. Walk-in reading at ambient temp of 39*F, food is being cooled back down to 41*F or below. Discussed with PIC on replacing built in thermometer, and getting thermometer to keep inside of walk-in. Correct By: Corrected At Time Of Inspection
