#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed at the small reach-in by the register the ambient temperature of the unit to be 57*F measured with a min/max thermometer. TCS items such as whole milk, 2% milk, half & half, almond milk, and oatmilk had internal temperatures of 58*F to 60*F. Per person in charge (PIC) the TCS items had been in the unit for more than 4 hours. Discussed with PIC Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Embargoed the TCS items and PIC voluntarily discarded at time of inspection. Facility has other adequate refrigeration. Corrective Action: Corrected at time of inspection.

Observed deep container of vegetable soup in the reach-in in the back of the restaurant. Per PIC the soup was made at home and transported to the facility for sale. Discussed with PIC all food must be obtained from an approved source as defined by law. Food prepared in a private home may not be used or offered for human consumption in a food establishment. All food from unapproved source was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a small ice machine in the back of the restaurant that has a condensation line dripping into a bucket. Discussed with PIC the condensation line shall drain into a floor sink.
