Observed employee wash bowls used for cooked chicken and sauces in the three compartment sink. Employee washed, rinsed, stored as clean and did not sanitize. Discussed with person in charge (PIC) Food-contact surfaces must be properly sanitized after washing and rinsing. Food-contact surfaces were properly sanitized at time of inspection. Observed chicken tenders in the hot holding deli case with internal temperatures of 114*F to 119*F. Per person in charge (PIC) the chicken tenders were cooked to 188*F 1.5 hours prior to inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Per Person in Charge (PIC) the tenders have been hot holding for less than an hour prior to reinspection. Discussed with PIC all TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
