PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge it was determined that the pearls were cooked around 11AM. After discussion with the person in charge it was determined that rice was cooked more than 4 hours prior. Corrective Action: Corrected at time of inspection. Predefined Comment: All TCS foods improperly hot held were discarded by PIC at time of inspection. Discussed utilizing 4 hour time as a public health control, reviewed requirements. Corrective Action: Corrected at time of inspection.

Observed rice roll sauce/71°F held at room temperature containing cooked garlic and cooked onions. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined that the sauce had been held at room temperature for more than 4 hours (prepared yesterday).
