Observed cooked beef (carne asada) and cooked pork (adobada) being stored in the walk in cooler, being covered with lids and having an internal temperature of 47-51*F. Person in charge states they cooked these products the day before and have been cooling in the walk in cooler since the night before. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.

In the walk in cooler, observed cooked beef tongue (lengua) being stored in to-go grocery bags. The use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. Person in charge removed the food from these bags and started placing them in approved food bags. Corrective Action: Corrected at time of inspection.
