-- At the time of inspection, a Certified Food Protection Manager (CFPM) was not on site. A CFPM is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

-- In walk-in refrigerator, observed the following ready-to-eat TCS items with no date: shredded mozzarella cheese, compound butter with garlic and herbs, sliced salami, sliced ham, cole slaw, pork sausage, sliced turkey, and veggie soup. In low-profile refrigerator, observed grilled chicken, tuna salad, cut cherry tomatoes, sliced tomatoes, and cut lettuce. The PIC stated all items were prepared between 1 to 6 days ago. The PIC stated they knew when each item was prepared. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Inspector's notes

-- Employee observed preparing food orders with loose/hanging jewelry on wrists. Reviewed jewelry restrictions with the PIC: Except for a plain ring such as a wedding band, while preparing food, food employees may not wear jewelry including medical information jewelry on their arms and hands. Requested jewelry be removed or restrained by glove (if wearing for religious purposes) at the time of inspection. Corrective Action: Corrected at time of inspection.
