observed multiple pans of shreded beef and cooked beans, at 112-116 deg f . per manager prepared in the morning. noted meats placed in deep plastic tubs. discussed with manager strategies to facilitate/expedite the rapid food cooling. suggested smaled /shallower metal pans for rice and beans. also use of ice bath reviewed. based on the extent of food preparation, please divide the cooling shallow food pans among the facility 3 walk-in coolers, instead of all hot food placed in one walk-in cooler. use of shelf near the fan blowers reviewed. manager provided on site training to kitchen staff. food from 7-8, temperature indicating 48-49 deg f discarded. food prepared today all transferred to smaller metal pans and divided among three walk-in coolers 41 deg f established. mcesd food cooling guidance document provided via email.
