Inspector's notes
Observed hard boiled eggs, cut lettuce, 10 pre-made salads, shredded cheese, and 30+ shredded cheese portion cups ranging from 48*F to 53*F in the refrigerator by the walk-in. Ambient temperature was 44.2*F using min/max thermometer. Person in charge stated the pre-made salads were prepared and placed in the unit at approximately 6:45am, time of inspection was approximately 9:30am. PIC relocated the pre-made salads to walk-in to rapid cool. PIC stated the hard boiled eggs, cut lettuce, and shredded cheese portion cups were in the unit since at least yesterday and voluntarily discarded - see embargo form. Corrective Action: Corrected at time of inspection.
